Chicken Chorizo Breakfast Burrito

Ingredients

  • 4oz lean ground chicken
  • 1 tbsp chorizo seasoning mix
  • 2 tbsp plain non-fat greek yogurt
  • 2 eggs (sub egg whites for lower calories)
  • Low calorie burrito-sized tortilla
  • 1/4 onion, diced
  • 1/2 bell pepper, diced
  • 1/2 medium potato

Instructions

  1. Add ground chicken, chorizo seasoning mix, and white vinegar to a bowl and combine. Cover and refrigerate for at least 8 hours.
  2. Dice your potato into small chunks (think hashbrowns). Place them in a bowl, completely cover with ice water, and let them sit for ~30 minutes.
  3. While the potatoes are soaking, bring a pan to medium heat, then add diced onions. Sauté for 1-2 minutes until some color starts to form.
  4. Add diced bell peppers to pan with onions. Continue sautéing for 1-2 minutes until the peppers develop some color.
  5. While peppers and onions cook, combine two eggs and greek yogurt and whisk until smooth.
  6. Reduce heat to low and add egg mixture to the pan with the peppers and onions. Cook until the eggs are done to your liking, stirring gently every 1-2 minutes.
  7. While the eggs cook, remove your potatoes from the water bath and dry them completely with a paper towel. Toss them with your favorite seasonings (I like salt, pepper, and Italian seasoning), then air fry at XXX ° F for YY minutes, shaking the basket occasionally.
