Ingredients
- 16oz chicken tenderloins
- 2 packs Quest protein chips, any flavor
- 1 egg
- Spray oil
Instructions
- Trim excess fat from chicken tenderloins and remove tendons.
- Crush both packs of Quest chips until finely crushed. A food processor makes quick work of this, but you can easily do it by hand as well. Transfer to a bowl or plate large enough for dipping the chicken tenders.
- Beat one egg in a bowl large enough for dipping the chicken tenders.
- For each chicken tender, fully coat it in the egg. Transfer it to the Quest chip dust and coat evenly on all sides.
- Pre-heat air fryer to 400° F. Add chicken tenders in a single layer and air fry for 8 minutes, flipping halfway through.
- Remove chicken tenders from air fryer and confirm their internal temperature has reached at least 165° F.
