Quest Chicken Tenders

Ingredients

  • 16oz chicken tenderloins
  • 2 packs Quest protein chips, any flavor
  • 1 egg
  • Spray oil

Instructions

  1. Trim excess fat from chicken tenderloins and remove tendons.
  2. Crush both packs of Quest chips until finely crushed. A food processor makes quick work of this, but you can easily do it by hand as well. Transfer to a bowl or plate large enough for dipping the chicken tenders.
  3. Beat one egg in a bowl large enough for dipping the chicken tenders.
  4. For each chicken tender, fully coat it in the egg. Transfer it to the Quest chip dust and coat evenly on all sides.
  5. Pre-heat air fryer to 400° F. Add chicken tenders in a single layer and air fry for 8 minutes, flipping halfway through.
  6. Remove chicken tenders from air fryer and confirm their internal temperature has reached at least 165° F.
